Paging Long Voyager...check engine light - coolant code on my 2014 T&C

My parents borrowed my 2014 Chrysler Town and C ountry to drive up to Nebraska from Houston. This morning when they started it up in northern Kansas they got a check engine. I flew up today (we are headed up to South Dakota pheasant hunting) and the code is P0128 - coolant below temp. Some quick googling and it seems like it could be a stuck open thermostat. The temp reading from the OBD scanner read 188, and I can get good heat from the heater. Coolant level is on the minimum end, but looks clean and clear.

We are planning to drive it to SD tomorrow morning, and at this point I don’t think it will be an issue.

Any thoughts / help? Other things I should check?

where is the gauge reading on the dash? When my Ranger’s t-stat started hanging open, the gauge would read lower and lower until it finally threw a CEL.

188 on a modern vehicle seems a bit low.  IIRC engines run closer to 200-210 now.

Temperature gauge on the dash was reading just below middle, not dropping.  Agree that based on some research 188 does seem a little low, but not low enough to cause a real issue (I think).

I think mine is doing same. Its constantly 1/4 on the gauge but threw the code quite some time ago, but hasnt since. That was a couple months ago.

I have a 2012 T&C and got the same code, replaced the thermostat housing with a thermostat preinstalled from rockauto and resolved the issue, the code means that the engine is not getting to 203 degrees that the computer wants to see before the thermostat opens up
